Halloween-Themed White Chocolate Eyeball Recipe
White Chocolate (Ersatz) Truffles Recipe
Spooky little white chocolate eyeballs stare up at you. Put them in a strawberry or raspberry sauce to give them an extra touch of horror. This is a great Halloween recipe.
These truffle-like treats are quick and easy to make and require only a few ingredients. Oh, yes, and they taste good.
You can make this white chocolate candy recipe all year round (just leave off the iris and pupil).
Little Eye Candy
Many years ago, my cousin made these little delights for Christmas--minus the eyeball and in dark chocolate. They are very sweet and were served with the dessert, espresso, and cordial course of our big Italian family meal.
We all inhaled them.
I have adapted her recipe here to make it creepy.
You're Going to Need a Double Boiler, or to Put One Together
In order to keep the mixture from burning, melt the candy in a double boiler.
If you don't have a double boiler set a smaller pot inside a larger pot of water. I used a 3 quart pot inside a 4 quart. A 2 quart and 3 quart would also work.
Be careful to only put and inch or so of water in the larger pot. You don't want it to boil up and splash and burn you. You just want to keep the upper pot from touching the heat source directly.
Also, use a long handled cooking spoon, rather than a short handled tablespoon. This will keep your arms from being burned from any escaping steam.
These really don't take long to do
Don't let the total time scare you. These are super easy. The total time includes chill time.
I would suggest an adult do the cooking. But rolling the eyeballs and decorating is something that you can do with your children.
- 1 oz strawberry syrup
- 12 ounces white morsels (they aren't labeled white chocolate)
- 14 ounces sweetened condensed milk
- 36 mini chocolate chips
- 1 drop blue or green food coloring
- Pour the condensed milk into the top pot. Stir in in the white chocolate morsels. Cover.
- Set the stove on high, but watch the pot for a while. You don't want it so hot that the water in bottom pot boils over. Adjust as necessary.
- Stir occasionally. Really. You don't have to stand over it.
- When all the chips are melted and the mixture is smooth. Remove it from the heat. Let it cool about 10 minutes and scoop out a scant 1/4 cup of the mixture into a small cup or bowl. Put 1 drop of green or blue food coloring in the cup and stir. See photo. Put this in the refrigerator.
- Put the pot of uncolored mixture in the refrigerator until it is cold about 1/2 hour.

1 cup = 8 ounces
Take the chilled blue mixture from the refrigerator
It's in a smaller dish. It will chill first.
The blue mixture should be cold to the touch after about 15 minutes.
Take out little pinches of the mixture and roll it into a pea size ball. Then, flatten the ball by pressing on it with your index finger. (See the photo).
Make about 36 of these.
Put these back in the refrigerator to keep cool.
Take the chilled white mixture from the refrigerator
It should feel cold to the touch.
Scoop about a heaping teaspoon of the mixture out and roll it between your hands into approximately 1 inch balls.
Different white chocolate morsels and condensed milk may react differently. If the balls are not holding their shape and start to melt into blobs; then the mixture may not be cold enough. Try chilling the plate you are putting them on. Another fix is to dust your hands with a little bit of confectioners sugar and work it into the eyeball.
Now for the Assembly - The fun part!
Take the flattened blue dots and plop them on the white truffles. Put a mini chocolate chip in the middle of each one to form the pupil.
Now for the creepy finale
The serving presentation -making it icky
I prefer a white or clear plate for this, so the eyeballs show up.
Plop a drop of strawberry syrup everywhere you are going to place an eyeball. Drizzle a little running down the rim in droplets.
Place an eyeball on the strawberry syrup drop.
If you want to be a little more ghoulish, drizzle some on the eyeballs.
Store in the refrigerator until almost ready to serve. They shouldn't be ice cold when served so take them out a little before serving time.

How squeamish are you?
I have friends who annually attend a dinner given by one of geographical societies. At the cocktail hour, the hors d'oeuvre table has "treats" from around the world. There are worms, fried chicken feet, caterpillar, etc.
My friends try what they consider "safe" foods, such as caribou.
The main course is "normal" food.
